2008 Bollinger "R.D.", Extra-Brut, Champagne, France
ABOUT THIS WINE
The 2008 R.D. is composed of 71% Pinot Noir and 29% Chardonnay, sourced exclusively from 18 crusâpredominantly Grand and Premier Cru sites including AĂż, Verzenay, and Le Mesnil-sur-Oger. After fermentation in old oak barrels and partial malolactic conversion, the wine spent over 13 years on the lees before disgorgement in 2022, showcasing the "Recently Disgorged" (R.D.) philosophy Bollinger pioneered: late disgorgement to preserve freshness and aromatic intensity while revealing the complexity that only time can deliver. The dosage is kept low (3 g/L), allowing the wineâs purity and terroir expression to shine. Expect layers of roasted almond, citrus peel, and iodine minerality to unfold with air. A wine for contemplative sipping or elegant pairings such as langoustine, truffle risotto, or aged ComtĂ©.
