âMetisâ is the result of a decade-long collaboration between Klein Constantia and famed Sancerre vigneron Pascal Jolivet, aimed at crafting a terroir-driven Sauvignon Blanc with European sensibility and South African soul. The 2022 vintage reflects cool oceanic influences and granite-rich soils of the Constantia hillsides, fermented using only wild yeasts and aged on fine lees in large neutral foudres for complexity and texture.
