ABOUT THIS WINE
The fruit is harvest from a 0.6 acre plot with an average age of the vines at 52 years. Pneumatic pressing of the whole grape harvest. Racking, conservation on fine lees. Alcoholic fermentation takes place entirely in 100% in oak barrels. Once malolactic fermentation is complete the wine spends 11 months without racking with weekly bĂątonnage in 30% new barrels (origin: Allier, Vosges). Bottling on the property with fining and\or filtration.
ABOUT THIS PRODUCER
Jean-Marc Boillot was one of the younger generation in Burgundy who was determined to improve his familyâs wines. In 1984, after vinifying 13 vintages at the familyâs domaine, Henri Boillot, Jean-Marc walked out in protest, intent on producing highly concentrated, rich, and ripe wines. He became the winemaker for Olivier Leflaive for the next four years and at the same time produced wines from 5-acres of vineyards, bottled under his own label. The wines impressed Boillotâs grandfather, who bequest half his vineyard to Jean-Marc. Boillot runs his domaine from his grandfather Henri Boillotâs house and cellars in the village of Pommard. Jean-Marcâs maternal grandfather was the late Etienne Sauzet, from whom he also inherited exceptional vineyards.
