Now under the stewardship of Claude Mandois, the house maintains 35 hectares of vineyards, many of which are Premier Cru, and practices sustainable viticulture with minimal intervention in both vineyard and cellar. Mandois is known for its preference for barrel fermentation in select cuvĂ©es and extended lees aging, which lends their Champagnes a signature roundness and depth.
